Making Mistakes

I hate when I make mistakes. It makes me feel anxious. Sometimes I avoid doing things for fear of making mistakes. I have suffered badly for a long time. Since I started at New Horizon I’ve started to do things and I’ve made mistakes, but it doesn’t feel so bad now.       Maybe by making mistakes we can learn and that can only be a good thing.

Recipe

Beef Curry

Ingredients:

Rice                                                                                                                                                                        3 Large Onions                                                                                                                                                3lbs of Stewing Beef or Round Steak                                                                                                          3 tbls of ‘Bols’ curry powder. Mild-Med                                                                                                    1-2 cans of coconut milk                                                                                                                                2 cans of tomatoes                                                                                                                                            1 tbls tomato puree                                                                                                                                        salt & pepper to taste

Roughly chop onions. Fry in pan with some oil. Put into large pot.                                                 Cut meat into 1 inch cubes. Brown meat in small lots, put in pot.

Put in curry powder, blending into meat & onions. Allow to “cook off” for a couple of minutes, stirring all the time. Add cans of tomatoes & tomato puree & 2-3 cans of water, bring up tp boil and allow to simmer until meat is tender and liquid has reduced by half.    Add coconut milk.

Serve with rice & naan bread.  Serves 6.

A Holiday in Turkey 

A few years ago I treated  myself to a few days holiday in Turkey. The month I left for Turkey we were in Mid- February. The city I decided to stay in was Istanbul. Leaving Dublin airport it took around 3 and a half hours to reach Istanbul Airport, but first we had to stop off in Zurich.

Leaving the airport on the way to the centre of the city, there were Palm trees along the route and the night was very warm. The hotel I stayed in was in the hills and had a great view of the city and its great river, the Bosphorus. Having a cup of coffee in the hotel café, you could hear the Imans calling the people to prayer.

The next morning I went on a tour of the city, seeing the world famous Blue Mosque. I had lunch, then went on a river cruise and to top it all, a school of dolphins followed the boat; it was very surreal. I enjoyed my holiday very much and the people were warm and friendly.

My Time in New Horizon

My time in New Horizon has been fantastic so far. I started in August 2015. The staff and the people on the course are lovely. I go and see a movie every Tuesday in Rua Red Theatre in Tallaght. There are different movies on every week. We have dinner in the centre at 12.45 and the food here is really nice. There is a coffee dock in the centre and we take turns in making coffee. The centre will be 20 years here in August and we will be having a celebration. In the summertime, we go on outings. Last year we went to Newbridge Silverware in the people carrier.

There is a big gym in the centre and the participants use it sometimes. My confidence and self-esteem have improved greatly since I started here.

My favourite time of year is summer. I absolutely love the sun, it brings out the best of me & my girls, Emma and Lauren. Lauren seems so much happier in the sun. I have heard of people who develop seasonal affective disorder. I can well believe it.

It warms your body and bones, it’s lovely to sit out and warm your face and bones. It really cheers me up. I went to Florida when I was 16 and I loved it so much, the weather was 30° plus. Walking the roads, picking oranges off the trees and walking to the beach, white sand and sky blue seas. I went to the carnival with my au pair family and got on an elephant!

Sun Rise

One day, coming out of my house with the headphones on, listening to Radio Nova, the sun was shining and on comes the song, ‘Here Comes the Sun’ by The Beatles.

It filled myself with sunshine through the ears and eyes, and for the rest of the day I was happy.
