Here in New horizon hub, we took time to celebrate the day.
In the morning David took a group on a walk, Roisin and a group did some creative colouring and Gemma, Lisa, Dermot, and Liam baked some butterfly cakes. At 2:15 we all sat down together for a cuppa and a chat and had a little treat to mark the day. Below is the recipe we used to make them.
12oz self-raising flour 8oz of margarine
8oz of sugar 4 eggs
Strawberries jam fresh low fat cream
Bun cases bun trays
Oven set at 180
Cream the sugar and the margarine together. Whisk the eggs and add the flour in slowly to the creamed mixture, putting in a spoonful of flour with each bit of egg, to prevent the mixture from curdling.
Bake for 18 minutes.
When the bun are cooled using a sharp pointed knife cut out core shape from the middle of the bun, drop in a little jam and cream,
Cut the top piece of the bum in two to make the wings and sprinkle with icing sugar
